Authors: Katherine Hall Page
2 sticks unsalted butter at room temperature
1 cup brown sugar
¾ cup white sugar
2 large eggs, slightly beaten
½ teaspoon vanilla extract
2¼ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1½ cups semisweet chocolate chips
1½ cups butterscotch chips
1 cup coarsely chopped walnuts
Preheat oven to 325°F. Cream the butter and sugars together by hand or with an electric mixer. Add the eggs and vanilla extract. Beat until fluffy. In a separate bowl, combine the flour, baking soda, and salt. Add this to the butter mixture and stir or mix well. Stir in the chips and walnuts. Drop golf-ball-size portions onto a nongreased cookie sheet. Bake for 15 to 20 minutes. They should be golden brown. Use the longer time for a crisper cookie. Cool on brown paper or racks. Makes 2 dozen cookies.
You can substitute the chips and walnuts with whatever comforts you or your family and friends enjoyâother chip varieties (they now have Reese's and M&M chips), raisins, other kinds of chopped nuts. These cookies are especially comforting when they're still warm and the chips haven't hardened. This is a variation of Kyra Alex's extremely comforting chocolate-chip-
cookie recipe, again from Lily's Café in Stonington, Maine.
Â
Note on recipes:
Substitutions can always be made: Egg Beaters, margarine, low-fat mayonnaise, and 1 percent, 2 percent, or skim milk, for example.
My thanks to Ethel and Stanley Clifford for all their help, and for answering what often must have seemed like extremely odd questions. I'm particularly grateful to Stan for supplying the proper termâa
no'theaster
âto describe that fierce storm; I'll never say
nor'easter
again. Thanks also to Paul and Corinne Sewall for the information pertaining to life as a fisherman and Paul's insider information on how to win a Wacky Rowboat race. Thank you, Hubert Billings, for setting me straight on the moose lottery and some other things. Once again, Dr. Robert DeMartino supplied medical information, and culinary expertise was provided by Kyra Alex, Lily's Café, Stonington, Maine. And, as always, special thanks to my editor, Jennifer Sawyer Fisher, and agent nonpareil, Faith Hamlin. Finally, a special bow to the Sunshine Dance Club.
