Graham Cracker Crust
Makes 1 pie
∣Sadly, the graham cracker crusts at the store are usually loaded with fat and aren't whole-wheat. I've tried making my own crust at home a few ways, and this is my favorite method. It firms up and stays hard without getting soggy even as it lingers in the fridge for days.

c whole-wheat graham
crackers, crumbled

tsp ground cinnamon
7 to 8 tbsp unsweetened
applesauce
1. Preheat oven to 350°F. Grease 9-inch pie dish and set aside.
2. Place graham crackers into a food processor and pulse until crumbles reach the consistency of coarse sand or sea salt.
3. Transfer graham cracker crumbles to a mixing bowl and whisk in cinnamon.
4. Add applesauce and stir until evenly wet and large clunks form.
5. Using your fingers, press mixture into prepared pie dish to form a crust.
6. Pack the crust down tightly and bake for 8 minutes.
7. Allow crust to completely cool before using.
CHEF'S NOTE:
Substitute any flavored graham crackers you like: chocolate, vanilla, or ginger.

Cream Cheese Icing

c vegan cream cheese

c confectioners' sugar
non-dairy milk, as needed
1. Using electric beaters, whip cream cheese with sugar until you reach a glaze consistency.
2. Add more sugar for a thicker paste, or if a sweeter icing is desired.
3. If the mixture becomes too thick, thin out with non-dairy milk.
VARIATION
Lime Cream Cheese Icing
Add the juice and zest of one small lime.
Maple Icing
Serves 12
∣ This is so good you'll want to eat it with a spoon. Spread it on Pumpkin Bread (pg. 52) or Carrot Cake Cupcakes (pg. 213).
1 c confectioners' sugar
2 tbsp pure maple syrup
1 tsp ground cinnamon
1 tsp vanilla extract
1. Combine all ingredients together in a small bowl, whipping to combine.
2. Add more maple syrup for a thinner icing or more sugar for a thicker icing.

Vanilla Icing

∣ What's more classic than vanilla? You can omit the vanilla extract if you use vanilla non-dairy milk.
1 c confectioners' sugar
1 tbsp non-dairy milk
1 tsp vanilla extract
food coloring (optional)
1. Stir ingredients together to combine.
2. Add more sugar to thicken the icing or more non-dairy milk to thin it out. Ideally, you want the consistency to be a paste-like glaze.
3. Add food coloring, if desired, and slather icing onto cupcakes. Add garnishes while the icing is still wet to ensure they stick.
VARIATION
Peppermint Icing
Substitute peppermint extract for vanilla extract.
