Orange Date Bread

Ummm, you'll smack your lips when you taste this one. It's a taste treat par excellence. Serve with fruit for a light dessert.

Preparation time:
20 minutes

Approximate cycle time:
1 hour and 20 minutes

Yield:
16 slices, 32 servings

1/2 cup orange juice

1/2 cup water

1 cup finely chopped dates

1 teaspoon vanilla

2 tablespoons vegetable oil

3/4 cup sugar

1 1/2 teaspoons baking powder

1 teaspoon baking soda

2 cups all-purpose flour

1/2 cup chopped nuts

2 tablespoons grated orange rind

1 Place the ingredients in the pan in the order listed.

2 Select Quick or Cake setting and start your bread machine.

3 Keep the lid open and use a rubber spatula around the edges to be sure that the dry ingredients get completely moistened during the mixing time.

4 When the cycle is complete, remove the pan from the machine but do not take the bread out of the pan for ten minutes.

5 Remove the bread from the pan and allow it to completely cool before slicing.

Save any extra grated orange peel in a small, plastic freezer bag. Press out any excess air from the bag before sealing. Store in the freezer for future use. It will thaw very quickly when you need it.

Pineapple Carrot Bread

Cinnamon, nutmeg, and allspice blend into this bread to spice it up — delicious.

1/2 cup crushed pineapple, drained

1/2 cup raisins

1/2 cup finely grated carrots

1 tablespoon molasses

1/2 cup applesauce

3/4 cup light-brown sugar

1/4 teaspoon allspice

1/4 teaspoon nutmeg

1/2 teaspoon cinnamon

1/2 teaspoon salt

2 teaspoons baking powder

1/2 teaspoon baking soda

A delicate bread that is a perfect accompaniment for a chicken or turkey salad entrée or as a light dessert. You can choose which nuts to use; walnuts are good, pecans are even better.

3/4 cup canned pumpkin

3 tablespoons oil

1 large egg

1/2 cup sugar

1 teaspoon baking powder

1/4 teaspoon baking soda

1 teaspoon cinnamon

1/4 teaspoon nutmeg

2 cups all-purpose flour

1/2 cup raisins

1/4 cup coarsely chopped nuts

1 Place the ingredients in the pan in the order listed.

2 Select Quick or Cake setting and start your bread machine.

Warning:
Coarsely chopped nuts show up in the bread. If you chop them too fine you will wonder where they are.

Tip:
Grated carrots may be purchased at the salad bar in the grocery store. You can buy the amount you need — no waste.

Warning:
Raisins plumped for baking disintegrate when the bread machine mixes. Sun-dried raisins used directly from the package will remain intact.

2 cups buttermilk

1/2 cup sugar

1 1/2 teaspoons salt

1 teaspoon soda

4 cups all-purpose flour

1/2 cup raisins

1 cup milk

1 large egg

4 teaspoons oil

1 teaspoon vanilla

3/4 cup sugar

1 teaspoon salt

1 tablespoon baking powder

1 cup flaked sweetened coconut, lightly toasted

2 teaspoons grated orange peel

2 cups all-purpose flour

1 Place the ingredients in the pan in the order listed.

2 Select Quick or Cake setting and start your bread machine.

3 Keep the lid open and use a rubber spatula around the edges to be sure that the dry ingredients get completely moistened during the mixing time.

To toast the coconut, spread it on a jellyroll pan and place the pan under a broiler. Do not take your eyes off the coconut while it is broiling. The sugar in the coconut browns very quickly.

Zucchini Bread

This version of Zucchini Bread works great in a bread machine. We've cut back on the amount of sugar that other recipes may call for and enhanced the flavor with maple flavoring. Our taste-testers raved about how good it is. The loaves dome so beautifully, you could take it with pride to any potluck dinner or bake sale.

Zucchini Bread is a great keeper. It stores well and tastes even better as it ages.

2 eggs, large

1/2 cup vegetable oil

2 teaspoons maple flavoring, or 2 teaspoons maple syrup

3/4 cup white sugar

1 1/2 cups grated fresh zucchini

1 teaspoon salt

1 teaspoon baking soda

1 1/2 teaspoons baking powder

1 teaspoon cinnamon

1/3 cup uncooked dry oatmeal

2 cups all-purpose flour

1/2 cup coarsely chopped nuts

1 Place the ingredients in the pan in the order listed.
