3½-4-lb. beef round steak, cubed

1 cup finely chopped onions

½ cup firmly packed brown sugar

1 Tbsp. chili powder

½ cup ketchup

cup cider vinegar

12-oz. can beer

6-oz. can tomato paste

  1. Combine all ingredients except buns in slow cooker.
  2. Cover. Cook on Low 10-12 hours.
  3. Remove beef from sauce with slotted spoon. Place in large bowl. Shred with 2 forks.
  4. Add 2 cups sauce from slow cooker to shredded beef. Mix well.

Pile into
buns
and serve immediately. Reserve any remaining sauce for serving over
pasta
,
rice
,
or
potatoes
.

Hearty Italian Sandwiches

Prep. Time: 15 minutes

Cooking Time: 6 hours

Ideal slow-cooker size: 4-qt

1½ lbs. ground beef

1½ lbs. bulk Italian sausage

2 large onions, chopped

2 large green peppers, chopped

2 large sweet red peppers, chopped

1 tsp. salt

1 tsp. pepper

  1. In skillet brown beef and sausage. Drain.
  2. Place one-third onions and peppers in slow cooker. Top with half of meat mixture. Repeat layers. Sprinkle with salt and pepper.
  3. Cover. Cook on Low 6 hours, or until vegetables are tender.

With a slotted spoon, serve about 1 cup mixture on each
sandwich roll

Top with shredded
Monterey Jack cheese
.

Note:

For some extra flavor, add a spoonful of salsa to each roll before topping with cheese.

Barbecued Spoonburgers

2 Tbsp. oil

½ cup chopped onions

½ cup diced celery

half a green pepper, chopped

1 Tbsp. Worcestershire sauce

½ cup ketchup

1 garlic clove, minced

1 tsp. salt

6-oz. can tomato paste

2 Tbsp. vinegar

2 tsp. brown sugar

1 tsp. dry mustard

  1. Brown beef in oil in saucepan. Drain.
  2. Combine all ingredients in slow cooker.
  3. Cover. Cook on Low 6-8 hours, or on High 3-4 hours.

Serve on

or over mashed
potatoes

Sloppy Joes

Cooking Time: 2-6 hours

Ideal slow-cooker size: 4- to 5-qt

1 lb. ground beef

1 small onion, chopped

1 small green pepper, chopped

14½-oz. can diced tomatoes

3 Tbsp. brown sugar

2 tsp. Worcestershire sauce

1½ tsp. ground cumin

1 tsp. chili powder

½ tsp. salt

  1. Brown beef in skillet, stirring to break into small pieces.
  2. Add onion and pepper to meat in skillet, cooking a few more minutes. Drain off drippings.
  3. Transfer meat mixture to slow cooker.
  4. Stir in tomatoes, brown sugar, Worcestershire sauce, and seasonings.
  5. Cover and cook until flavors are well blended, 2 hours on High or 6 hours on Low.

To serve, fill each
hamburger bun
with ½ cup beef mixture.

Corned Beef

2-3-lb. cut of marinated corned beef

2-3 garlic cloves, minced

10-12 peppercorns

  1. Place meat in bottom of cooker. Top with garlic and peppercorns. Cover with water.
  2. Cover. Cook on High 4-5 hours, or until tender.

Cool meat, slice thin, and use to make Reuben sandwiches along with sliced
