Brown Gravy
Makes 2 cups
| When I realized most brown gravies aren't vegetarian I set out to make my own healthy version. Serve it with Dirty Mashed Potatoes (pg. 190), Hippie Loaf (pg. 144), and French fries. Yes, I eat my French fries with gravy; it's a Scranton thing. Try it!

c nutritional yeast

c whole-wheat pastry
flour or other flour
2 c vegetable broth
2 tbsp low-sodium soy sauce
a few dashes of pepper
1 tsp granulated onion powder

tsp granulated garlic powder
salt, to taste
1. In a small nonstick skillet, whisk nutritional yeast and flour together and toast over medium heat until it smells toasty, about 4 minutes.
2. Transfer to a medium saucepan and whisk in remaining ingredients except the salt.
3. Bring to a boil and allow sauce to thicken as desired and add salt. For an even thicker gravy, mix 1 tbsp of cornstarch with 2 tbsp of water and pour it into the gravy.
No-Beef Gravy
Makes 1 cup

| Designed to complement the Seitan Pot Roast (pg. 132), this gravy has a rich, beef-like flavor with a subtle hint of ginger. Fresh or dried herbs such as thyme can also be added for a more complex flavor.
1 c No-Beef Broth (pg. 279)
1 tbsp cornstarch
1 tbsp whole-wheat flour or
other flour
salt, to taste
pepper, to taste
1. Whisk broth, cornstarch, and flour together until well combined.
2. Bring to a boil over medium heat and allow to thicken slightly.
3. Add salt and pepper.

Thanksgiving Gravy
Makes 1 cup
| Designed to be the perfect complement to Torkey (Tofu Turkey) (pg. 152) and Dirty Mashed Potatoes (pg. 190), this gravy is thick and heavenly.

flour or other
1 c non-dairy milk
1 small onion, diced
8 oz white mushrooms,
thinly sliced
2 tbsp soy sauce
1 tsp rubbed sage (not
powdered)
1 tsp dried thyme
salt, to taste
pepper, to taste
1. Whisk nutritional yeast and flour together with non-dairy milk and set aside.
2. Line a large frying pan with a thin layer of water and cook onion and mushrooms over high heat until the mushrooms start to soften and turn brown and most of the water has evaporated.
3. Add non-dairy milk mixture, soy sauce, and herbs, stirring to combine.
4. Bring to a boil and continue to cook until thick.
5. Add salt and pepper.
Sausage Gravy

crumbled
pepper, to taste
1. Whisk non-dairy milk and flour together.
2. Add to a saucepan and heat over medium.
3. Add in sausage and bring to a boil over high heat, then reduce heat to medium.
4. Allow gravy to thicken to a desired consistency.
5. Add pepper (I like it really peppery!) to taste.
