3 medium potatoes, sliced
3 carrots, sliced
1 small onion, sliced
2 Tbsp. dry rice
1 tsp. salt
½ tsp. pepper
1 lb. ground beef, browned and drained
1½-2 cups tomato juice, as needed to keep dish from getting too dry
To prevent potatoes from darkening, slice them, then stir a mixture of 1 cup water and ½ tsp. cream of tartar into them. Drain, then place potatoes in cooker and proceed with the recipe. âDale Peterson, Rapid City, SD

Note:
Freezes well.
Variation:
