Hamburger Potatoes

Makes 3-4 servings

Prep. Time: 15 minutes

Cooking Time: 6-8 hours

Ideal slow-cooker size: 4-qt

3 medium potatoes, sliced

3 carrots, sliced

1 small onion, sliced

2 Tbsp. dry rice

1 tsp. salt

½ tsp. pepper

1 lb. ground beef, browned and drained

1½-2 cups tomato juice, as needed to keep dish from getting too dry

  1. Combine all ingredients in slow cooker.
  2. Cover. Cook on Low 6-8 hours.

To prevent potatoes from darkening, slice them, then stir a mixture of 1 cup water and ½ tsp. cream of tartar into them. Drain, then place potatoes in cooker and proceed with the recipe. —Dale Peterson, Rapid City, SD

Cooking Time: 6-8 hours

Ideal slow-cooker size: 4-qt

1 lb. ground beef, browned

4-5 potatoes, cut in French-fry-like strips

1-2 onions, chopped

16-oz. can light red kidney beans, drained

¼ lb. Velveeta cheese, cubed

10¾-oz. can tomato soup

1½ tsp. salt

¼ tsp. pepper

butter

  1. Layer in slow cooker in this order: ground beef, potatoes, onions, kidney beans, and cheese. Pour soup over top. Season with salt and pepper. Dot with butter.
  2. Cover. Cook on Low 6-8 hours.

This is particularly good served with
Parmesan cheese
sprinkled on top at the table.

Beef and Lentils

Makes 12 servings

Prep. Time: 35 minutes

Cooking Time: 6-8 hours

Ideal slow-cooker size: 4- to 5-qt

3 whole cloves

1 medium onion

5 cups water

1 lb. lentils

1 tsp. salt

1 bay leaf

1 lb. (
or
less) ground beef, browned and drained

½ cup ketchup

¼ cup molasses

2 Tbsp. brown sugar

1 tsp. dry mustard

¼ tsp. Worcestershire sauce

1 onion, finely chopped

  1. Stick cloves into whole onion. Set aside.
  2. In large saucepan, combine water, lentils, salt, bay leaf, and whole onion with cloves. Simmer 30 minutes.
  3. Meanwhile, combine all remaining ingredients in slow cooker. Stir in simmered ingredients from saucepan. Add additional water if mixture seems dry.
  4. Cover. Cook on Low 6-8 hours (check to see if lentils are tender).

Note:

Freezes well.

Variation:

Top with sour cream and/or salsa when serving.

Judy's Hamburger Stew

Prep. Time: 15 minutes

Cooking Time: 2-8 hours

Ideal slow-cooker size: 5-qt

3 large potatoes, sliced

3 carrots, sliced

1 lb. frozen peas

1 onion, diced

2 ribs celery, sliced thin

salt to taste

pepper to taste

1½ lbs. ground beef, browned and drained

10¾-oz. can tomato soup

1 soup can water

  1. Put vegetables in slow cooker in layers as listed. Season each layer with salt and pepper.
  2. Layer beef on top of celery. Mix together soup and water. Pour over ground beef.
  3. Cover. Cook on Low 6-8 hours, or on High 2-4 hours, stirring occasionally.

Variation:

Substitute 28-oz. can whole, or diced, tomatoes in place of tomato soup and water.

Prep. Time: 20 minutes

Cooking Time: 4¼-6¼ hours

Ideal slow-cooker size: 4-qt

2 lbs. ground beef, browned

1 tsp. salt

½ tsp. pepper

¼ cup chopped onions

1 cup canned tomato soup

6 potatoes, sliced

1 cup milk

  1. Combine beef, salt, pepper, onions, and soup.
  2. Place a layer of potatoes in bottom of slow cooker. Cover with a portion of the meat mixture. Repeat layers until ingredients are used.
  3. Cover. Cook on Low 4-6 hours. Add milk and cook on High 15-20 minutes.

Variations:

1. Use home-canned spaghetti sauce instead of tomato soup.

2. Add a layer of chopped raw cabbage after each layer of sliced potatoes to add to the flavor, texture, and nutritional value of the meal.

Jeanne's Hamburger Stew

Prep. Time: 20 minutes

Cooking Time: 8-10 hours

Ideal slow-cooker size: 4-qt

2 lbs. ground beef

1 medium onion, chopped

1 garlic clove, minced

2 cups tomato juice

2-3 carrots, sliced

2-3 ribs celery, sliced

half a green pepper, chopped

2 cups green beans

2 medium potatoes, cubed

2 cups water

1 Tbsp. Worcestershire sauce

¼ tsp. dried oregano

¼ tsp. dried basil

¼ tsp. dried thyme

dash of hot pepper sauce

2 Tbsp. dry onion soup mix,
or
1 beef bouillon cube

1 tsp. salt

¼ tsp. pepper

  1. Brown meat and onion in saucepan. Drain. Stir in garlic and tomato juice. Heat to boiling.
  2. Combine all ingredients in slow cooker.
  3. Cover. Cook on Low 8-10 hours.

Variation:

Use 1 cup barley in place of potatoes.

Suit-Yourself Veggies with Beef

Cooking Time: 6-8 hours

Ideal slow-cooker size: 4- to 5-qt

3 cups grated raw carrots

2½ cups onions, sliced thin

6 cups grated raw potatoes

1 lb. ground beef, browned and drained

salt to taste

pepper to taste

10¾-oz. can cream of mushroom soup

1 Tbsp. Worcestershire sauce

  1. Grate and slice vegetables either in the amounts above, or to suit tastes of those you're serving and size of your slow cooker.
  2. Place layer of grated carrots in bottom. Season with salt and pepper.
  3. Lay onion slices on top of carrots.
  4. Place potatoes on top of onions. Season with salt and pepper.
  5. Put hamburger on top of vegetables. Season with salt and pepper.
  6. Combine soup and Worcestershire sauce in a small bowl.
  7. Spoon soup mixture over all.
  8. Cover. Cook 6-8 hours on Low, or until vegetables are as tender as you like them.
